Ingredients (serves 4)
1 eel, ½ c olive oil, 1 scoop of butter, 1 c white wine, 1 onion, oregano, salt, pepper
Method: Skin the eel and cut it into pieces. Sauté the roughly chopped onions in the olive oil and butter. Add the eel, oregano, pepper, and salt. Pour in the wine and let simmer gently.
