In the valleys of Comacchio the eel finds its natural habitat that allows it to live and reproduce. Taking advantage of the influence of the tides on the instinctive movement of eels, they still use ancient fishing techniques such as the simple and ingenious workman, an intricate system of bars and movable grids, formerly made of wood and cane, to arrow form, placed near the mouth of the canals that connect the valleys to the sea. The "Marinated Eel of the Comacchio Valleys" is the most typical processing of the valley fish. For this reason, the ancient method of processing the eel (provided for by a regulation of 1818) has been restored within the Marinated Manufacture, in the center of Comacchio.
